Brewing guide / recipe

Ingredients

  • Dry herb blend to make 500ml of elderberry syrup
  • 875ml of water
  • 1 cup raw honey (added last) 125gm

Instructions

  • Pour water into medium saucepan and add Elderberry dry mix, (do not add honey)
  • Bring to a boil, then cover and reduce to a simmer for about 45 minutes to an hour until the liquid has reduced by almost half. At that point, remove from heat and let cool enough to be handled
  • Pour through a strainer into a glass jar or bowl
  • Discard the Elderberries (or compost them!) and let the liquid cool to lukewarm. When it is no longer hot, add 1 cup of honey and stir well
  • When honey is well mixed into the elderberry mixture, pour the syrup into a 500ml sized amber bottle or 450-500gm glass bottle of some kind

Storage

Store in the fridge and enjoy daily for its immune boosting properties. This mix will last approximately 14-20 days in the fridge.

After 2 weeks I suggest adding alcohol to lengthen the shelf life of syrup.

Dosage

Standard dose:

  • Child: ½ tsp to 1 tsp. Once or twice daily
  • Adult: ½ Tbsp. to 1 Tbsp. for adults. Once or twice daily

Acute dosing:

  • If the flu does strike, take the normal dose every 2-3 hours until symptoms disappear

Adding alcohol

Stabilising syrup for a longer term use: Fermentation process that occurs after 10-20 days can be halted by this addition of alcohol. To stabilise your syrup I recommend using vodka or brandy. Your syrup needs to have 25% alcohol to stop the fermentation process and help is keep for 6 months.

Calculation: 500ml ÷ 4 = 125ml. 125ml of alcohol is needed and the end product will be approx. 625ml
